Sambel Pecel khas Ponorogo

Sambal pecel is a traditional chili sauce from Java, Indonesia. Sambal is a condiment that is usually served with boiled vegetables served with peanut sauce.
This peanut sauce not only complements a number of pecel vegetables, but also gives a tastier taste to a plate of warm rice accompanied by chicken satay, shredded meat or fried tempeh. The main ingredient for pecel seasoning is peanuts. Another mixture is brown sugar, garlic, red chili, cayenne pepper, tamarind, lime leaves, and salt. The peanut sauce spices also need to be roasted first. The goal is the same, so that it doesn't go rancid or change the taste of the chili sauce when stored for a long time. Pecel seasoning can last longer due to the mixture of spices in it. Such as brown sugar and salt which are natural preservatives. High concentrations of sugar and salt can make food last longer.
